1 lb. bacon, 1 lb. linguine, 10 cloves of garlic (finely minced), 1 large onion (peeled and chopped), 1 cup chicken stock, 1 cup white wine (or another cup of chicken stock), 4 eggs, a handful of parsley (roughly chopped), 1 cup grated parmesan, 1/2 stick of butter; black pepper

Boil a pot of water.  Season this with salt.  Slice the bacon into bite-sized pieces. Fry them in a pan (no oil pls. – allow the bacon to render its fat).  By this time, your water is boiling, so go ahead and throw in the pasta into the pot. Take the fried bacon out of the pan, leaving the grease behind. Throw in the onion, allow it to cook for a couple of minutes, then add the garlic (garlic tends to fry/brown quicker so it’s better to add it 2nd).  Once cooked, take the onion + garlic out and dump the grease (you should have some brown bits stuck to the bottom of the pan). Turn up the heat and when the pan starts to smoke a little, add the white wine (or 1 cup chicken stock). Using a whisk, scrape the brown bits (the good stuff) from the bottom of the pan and mix into the stock.  Then bring back the bacon + onion + garlic and add the other cup of stock.  Allow to simmer in medium heat.  In a large bowl, beat together the eggs + parmesan + parsley (set aside some of the parmesan and parsley for garnishing).  Once the pasta is cooked (al dente), drain the water and throw the hot pasta into the egg mixture.  Throw in the bacon mixture + butter + pepper and mix! Serve on a large platter and garnish with parmesan+parsley.

saraaap! pasta carbonara is one of my comfort foods! I remember nung college, yan ang binabalik-balikan ko sa canteen kahit hindi pa recess (or kahit tapos na ito).
